Plasma gas below a certain temperature and above a certain pressure should solidify into plasma sheets.

That is called "Deposition" (gas to solid), "Sublimation" is when a solid becomes a gas, entirely skipping the liquid phase. Addressing the actual concept, I like the idea. It could be something atmos techs can do in a cooling chamber. It is certainly possible for a scientist to do as well, but it might be difficult without extensive modifications to the lab, or upgrades to the freezers. You should restrict this reaction to open-air, else you interfere with bomb making as well as possibly spawning bars in odd places.

Plasma evaporation like Bay used to have would be fun, too.
Liquid plasma bottle? No lid on it? Enjoy a low amount of plasma ending up in all reagent containers in the vicinity.
That actually bit me in the ass when I made a prank smoke cig - only smoke, no reagents - and gave it to the detective.
Thanks to ZAS the entire starboard and escape hallway was on fire. Cue bwoink.
